Our rendered lard is a wonderful, all-purpose, local cooking fat! Good for sautéing, frying, pie crusts (find our favorite recipe below!), and more. Because of its unique fat composition, lard can be heated to high temperatures. Lard made from pastured pork is an excellent source of vitamin D and of healthful monounsaturated fat. Available frozen in tubs approximately 2 lb or 10 lb each.
Perfect Pie Crust:
4 cups flour of choice (my favorite is local stoneground pastry flour!)
1 tbsp sugar
2 tsp salt
1 cup cold lard
3/4 cup cold butter
1 tbsp vinegar
1 egg
1/2 cup ice water
Combine dry ingredients. Cut in lard and butter with pastry blender until crumbly. Whisk vinegar, egg and water together, and add to dry mixture, forming into a dough. Divide into 4 discs and refrigerate. For best results, keep dough chilled until ready to use. Makes 2 double crust pies.
